Som Tam – Papaya Salad – Thailand

  • 6 small cloves garlic – smashed and husk included
  • 1-2 tomatoes – cut into chunks
  • 1-3 tbsp sugar
  • 1-2 lime – add juice to taste
  • 1-2-3 Thai chili – to taste
  • 1-2 tbsp fish sauce – to taste
  • 1-2 tbsp tamarind sauce – if you can find it
  • 1/3 cup peanuts
  • Combine the above and mix in a mortar and pestle
  • Add 3 cups shredded green papaya (or cucumber as a substitute) and a little shredded carrot and fresh beans for colour 
  • Serve and enjoy

Kaneow Mamuang – Thai sticky rice with mango

Sticky Rice 

  • 2-3 cups rice – soak for 8 hours in water then rinse
  • steam for 20-30 mins until it forms a ball
  • Transfer to bowl

Sauce 
 

  • 3 cups coconut milk
  • 1 – 11/2 cups brown sugar
  • 1 tsp salt
  • Heat the above until dissolved
  • Spoon 3/4 of the sauce over rice
  • Mix back and forth systematically 4x
  • Let stand for 30 mins
  • Serve and top with sliced mango and side of coconut sauce for drizzling on top.
